This recipe was in our local newspaper a few weeks ago and I couldn’t wait to try it. 

BEER GRILLED CHOPS
4 boneless pork loin chops, trimmed, about 1 pound

Marinade
1/4 soy sauce
1 C beer – room temperature
2 T brown sugar
2 tsp. grated fresh ginger root

Combine marinade ingredients together well; place chops in a self-sealing plastic bag and pour marinade over, seal bag and refrigerate 4-24 hours.  Prepare grill.  Remove chops from marinade and place chops on the grill.  Grill for 10 minutes, turning once.

The pork chops were really moist and flavorful.  It is really important to get that fresh ginger in the marinade.  The flavor really pops.  I keep the ginger root in my freezer and whenever I need some fresh ginger I grate some off and put it back in the freezer.
