When you have leftover bananas laying around, sometimes banana bread or banana bars just don’t sound good. So, these muffins are a nice change and are a perfect little snack.

Chocolate Banana Raisin Muffins2 ripe bananas1 egg, beaten1/3 cup vegetable oil1 1/2 cups all-purpose flour (I have used 1 cup white, 1/2 whole wheat)1 cup sugar6 T unsweetened cocoa powder1 tsp baking soda1/2 tsp salt1/4 tsp baking powder1/2 cup raisinsSpray mini muffin pan with cooking spray. Preheat oven to 350 degrees.Blend bananas until smooth in mixing bowl. Add egg and oil. Blend. In bowl combine flour, sugar, salt, baking powder, baking soda, and cocoa. Add to the banana mixture and stir until moistened. Stir in raisins. Spoon about 1 tablespoon (I use a mini cookie scoop) of batter into each muffin pan cup. Bake for 12-15 minutes. Cool muffins slightly before removing from pan. Using my mini muffin pan, this recipe makes approximately 36 muffins.
