Kettle Corn and Smoothie Recipes Courtesy of Claritin



As a member of the CLARITIN MOM CREW, I get newsletters with some awesome recipes.  Here is two I wanted to share with you.

Who doesn't love the smell and taste of fresh kettle corn at your local fair or festival?  Now you can make your own!



KETTLE CORN

Ingredients:
  • 1/4 cup vegetable oil
  • 1/4 cup white sugar
  • 1/2 cup unpopped popcorn kernels
Directions: Heat the vegetable oil in a large pot over medium heat. Once hot, stir in the sugar and popcorn. Cover and shake the pot constantly. This keeps the sugar from burning. Once the popping has slowed to once every 2 to 3 seconds, remove the pot from the heat and continue to shake for a few minutes until the popping has stopped. Pour into a large bowl and allow to cool. If needed, stir slightly to break up large clumps.



We have been having a lot of smoothies this summer and I thought this one sounded so refreshing for a summer morning.  What a healthy way to start your day!




SUNSHINE SMOOTHIE

Ingredients:
  • 1 large banana, frozen
  • ½ cup of orange juice
  • 1 tbsp honey
  • ½ cup Greek yogurt
  • ½ cup of ice cubes
  • 1 orange, peeled and sliced
Directions: Add banana, orange juice, honey, yogurt, and ice cubes to blender. Blend until smooth, adding more honey to taste. Garnish with orange slices.
